Nutritional Yeast Dressing

If you can’t get to a Cafe Yumm, try out this copycat nutritional yeast dressing that’s vegan, gluten free, and so delicious.

When I first visited the pacific northwest, I was looking for a quick gluten free lunch spot, and I stumbled upon Cafe Yumm. That’s when my love of their Yumm sauce began. There sauce is a nutritional yeast dressing with such a unique taste. I was thrilled when I took the train down to Portland to find that the restaurant was a Portland-based chain. When I lived in Portland, this was my go-to lunch spot.

When I moved back home, you bet I bought jars of that sauce to bring home and savored every last drop! Not to be too dramatic, but it was so good, I almost paid the absurd shipping to get some sent cross country. The Yumm sauce is a nutritional yeast-based sauce, so I figured with my memory and my blender I could make something that would hit the spot.

Make your own Yumm Bowl:

I love the Yumm Bowl because it was flavorful, filling, and so fresh! So if you want to try one for yourself and don’t live in the PNW here’s what’s inside:

  • Brown rice
  • Black beans
  • Nutritional yeast dressing
  • Tomatoes
  • Black olives
  • Sharp cheddar cheese
  • Sour cream
  • Salsa
  • Avocado slices
  • Cilantro

What I love most about the yumm bowl is that it packs a big flavor punch for plant-based ingredients. Plus, it’s a great mix of fat, fiber, and protein to keep you feeling full for hours. There are really no rules when you’re building a grain bowl, so mix in your favorites or whatever you have on hand!

Nutritional Yeast Dressing

If you can't get to a Cafe Yumm, try out this copycat nutritional yeast dressing that's vegan, gluten free, and so delicious.
Prep Time 5 minutes
Course Sauce
Servings 10 servings

Ingredients
  

  • 1 cup water
  • 1 cup neutral oil
  • 1 cup almond flour
  • ¾ cup nutritional yeast
  • 2 tsp dijon mustard
  • 2 tsp onion powder
  • 2 tsp garlic powder
  • ½ tsp paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 tsp lemon juice

Instructions
 

  • In a high speed blender, add the water oil and almond flour. Blend on high until a uniform paste forms. 
  • Add in the remaining ingredients and blend until incorporated. Taste and adjust salt and pepper to preference. 

Notes

You may be able to substitute blanched almonds if you don’t have almond flour. I would recommend using a high speed blender to first blend the almonds into a flour texture before mixing the rest of the ingredients. Worst case you get a dressing that’s less smooth, but probably still delicious. You could also sub in cashews which would basically be making my favorite cashew cheese recipe thinned out with oil.
